Ingredients

For the Risotto:

  • 1 1/2 cups Arborio rice
  • 4 cups vegetable or chicken broth (kept warm)
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 8 oz (225g) cremini or button mushrooms, sliced
  • 1/2 cup dry white wine
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup heavy cream (optional, for extra creaminess)
  • 2 tbsp chopped fresh parsley
  • 1/2 tsp fresh thyme (optional)

Instructions

1. Prepare the Mushrooms:

  1. Heat 1 tbsp olive oil and 1 tbsp butter in a large pan over medium heat.
  2. Add sliced mushrooms and cook for 5-7 minutes until browned and tender.
  3. Season with a pinch of salt and pepper, then remove from the pan and set aside.

2. Cook the Risotto:

  1. In the same pan, heat the remaining olive oil and butter.
  2. Add the chopped onion and sauté for 2-3 minutes until translucent.
  3. Stir in the minced garlic and Arborio rice, cooking for another 1-2 minutes until the rice is slightly toasted.
  4. Pour in the white wine and stir until mostly absorbed.

3. Add the Broth:

  1. Gradually add the warm broth, one ladle at a time, stirring frequently.
  2. Allow the liquid to absorb before adding the next ladle of broth.
  3. Continue this process for about 18-20 minutes, until the rice is tender and creamy.

4. Finish the Risotto:

  1. Stir in the cooked mushrooms, Parmesan cheese, and heavy cream (if using).
  2. Season with salt, pepper, and fresh thyme.
  3. Remove from heat and let rest for 2 minutes.

5. Serve:

  1. Garnish with fresh parsley and extra Parmesan cheese.
  2. Serve warm and enjoy this creamy, flavorful risotto!

Tips:

  • Use warm broth to maintain an even cooking temperature.
  • Stir frequently to release the starch and create a creamy texture.
  • Substitutes: Swap white wine with lemon juice or more broth if needed.
  • For extra umami, add a splash of truffle oil or a sprinkle of nutritional yeast.

This Creamy Mushroom Risotto is the ultimate comfort food, packed with earthy flavors and a luscious texture. Perfect for date nights, family dinners, or impressing guests!
